Amazing Pork Tenderloin

This recipe is amazing, and one of my frequent go-to’s.

2-3 pork tenderloins


1 1/4 cups vegetable oil
3/4 cup soy sauce
1/4 cup Worcestershire sauce
2 Tablespoons dry mustard
1 Tablespoon pepper (preferably fresh ground)
1/2 cup red wine vinegar
1 1/2 Tablespoons parsley
1/3 cup lemon juice
2 cloves minced garlic

8 ounces sliced fresh mushrooms (optional)

Blend marinade ingredients in a blender.  Reserve 1 cup in a separate bowl.  Pour over tenderloins and marinate for 3 to 4 hours. (We have let it marinade overnight before and still delicious!)

Grill pork on the bbq at medium heat for about 20 minutes, turning and basting occasionally.

Add mushrooms to reserved marinade and heat.

Slice tenderloins and pour marinade over the top to serve.

Bacon Parmesan Pizza

1 prepared pizza crust
Favorite pizza sauce
Shredded Mozzarella Cheese
Italian Seasoning
Sliced Canadian Bacon
Grated Parmesan Cheese

Preheat oven to 450 degrees F.

Place pizza crust on a pizza stone, pie pan or large baking sheet.  Spread pizza sauce over the top.  Sprinkle shredded mozzarella cheese evenly over the top and sprinkle with Italian seasoning.  Arrange Canadian bacon slices over the top and sprinkle with Parmesan cheese.

Bake 10 minutes or until topping is bubbly.


Crockpot Chicken


4 boneless, skinless chicken breast
2 cups baby carrots
3/4 cup fresh green beans, cut ends off
2 large potatoes, scrubbed and diced
1 can cream of mushroom soup
1/2 cup sour cream
1 cup shredded cheddar cheese
Garlic salt


Place chicken breasts in crockpot.  Season with garlic salt and pepper.

Add carrots, green beans, and potatoes over the top of the chicken.

Mix soup and sour cream together and pour over the top of the vegetables.

Cover and cook on LOW for 8 to 10 hours (or HIGH 4-5 hours).

Serve with shredded cheese sprinkled over the top.

Baked Halibut


4 Halibut steaks (adjust to your family size)
1 Tablespoon lemon juice
1-1/2 Tablespoons Olive Oil
1 Tablespoon dry Italian dressing (from a packet)


Preheat oven to 400 degrees F.

Combine Olive oil, lemon juice and Italian dressing.

Place fish in 8 x 8 pan.  Pour seasoned lemon oil over the top and bake 30 minutes or until fish flakes.

Mandarin Pasta Salad


12 oz. bow tie pasta, cooked and drained
1 cucumber chopped (I prefer an English cucumber)
1 small sweet onion, chopped
6 oz. bag baby spinach
11 oz. can mandarin oranges, drained
1 lb. chicken breast meat, cooked and cubed
1 cup slivered almonds


1/2 teaspoon ginger
1/2 teaspoon minced garlic
1/3 cup rice vinegar
1/3 cup olive oil
1/4 cup orange juice concentrate
1 envelope dry onion soup mix
1/4 cup sugar


Mix dressing together and chill while preparing the salad.

Prepare salad ingredients minus the almonds. Just prior to serving toss with dressing, coating evenly.  Top with slivered almonds

Pork Pitas


1 lb. shredded pork (I always keep a container from Costco or Sam’s Club in my freezer)
1 medium tomato, diced
1/2 cup red onion, chopped
Shredded cheese
Pita pockets
Salsa (we love Jack’s salsa from Costco)


Combine pork, tomato, onion.

Fill Pita pockets.

Layer with cheese, salsa and lettuce, and enjoy!
