Mandarin Pasta Salad

Ingredients

12 oz. bow tie pasta, cooked and drained
1 cucumber chopped (I prefer an English cucumber)
1 small sweet onion, chopped
6 oz. bag baby spinach
11 oz. can mandarin oranges, drained
1 lb. chicken breast meat, cooked and cubed
1 cup slivered almonds

Dressing

1/2 teaspoon ginger
1/2 teaspoon minced garlic
1/3 cup rice vinegar
1/3 cup olive oil
1/4 cup orange juice concentrate
1 envelope dry onion soup mix
1/4 cup sugar

Directions

Mix dressing together and chill while preparing the salad.

Prepare salad ingredients minus the almonds. Just prior to serving toss with dressing, coating evenly.  Top with slivered almonds
