Almond Crusted Pork Medallions

1/2 cup almonds
2 tablespoons minced garlic
1 Tablespoon flour
1 Tablespoon Italian seasoning
1/2 teaspoon lemon pepper
2 lb pork tenderloin
3 Tablespoons oil

Combine almonds, garlic, flour, Italian seasoning and lemon pepper in a food processor until thoroughly combined.

Cut pork into 2 inch think medallions.  Brush pork with 1 Tablespoon oil.

Heat remaining oil in a large skillet over medium heat.  Dredge pork in almond mixture and place in skillet (it may take several batches) cooking 4 to 5 minutes per side or until a inserted thermometer reaches 165 degrees F.
