6 Boneless, skinless Chicken Breasts
2 Tbsp Olive oil
1 tsp salt
1 Tbsp minced fresh thyme
1 Tbsp grated lemon rind
1/4 tsp cayenne pepper
4 cloves minced garlic
3 lemons, cut in half
Preheat oven to 400 degrees F.
Place chicken on a large baking sheet. Stir together oil, thyme, lemon rind, salt, cayenne pepper and garlic in a small bowl. Rub mixture on chicken.
Arrange lemons, cut side up, around chicken. Sprinkle with thyme. Bake 45 minutes to 1 hour.
Squeeze roasted lemons over chicken and enjoy!
