1¾ lb boneless, skinless chicken breasts (cut for fajitas)
2 (12-oz) pkg fajita vegetable mix
4 Roma tomatoes, cut lengthwise into wedges
¼ cup avocado oil
3 Tbsp Mexican seasoning
1 head romaine lettuce, separated into leaves
2 limes, cut into wedges
Preheat oven to 425°F.
Place a large rimmed baking sheet in oven to heat while oven preheats.
Toss together chicken, fajita mix, tomatoes, oil and Mexican seasoning in a large bowl. Carefully spread mixture in a single layer on preheated baking sheet.
Bake 20 minutes or until chicken is done and vegetables are tender. Serve in lettuce cups with lime wedges.
Shortcut Note: Look for fajita mix (sliced bell pepper and onion) in the produce department.
